SAN CHOY BAU
Ingredients
50g Dried Chinese mushrooms soaked in warm water for 30 mins and diced
225g water chestnuts and chopped
6 spring onions finely sliced
1 chilli finely chopped
2 cloves garlic crushed
50g chopped ginger
150g fresh bean shoots ( canned ok)
500g pork or beef mince
8 to 10 iceberg lettuce cups depend how generous you are
50ml Shaoxing rice wine
50ml oyster or hoisin
50ml light soy sauce
1 tbs sesames oil
2tbs vegetable oil
Method
Heat frypan with oil add garlic and ginger and mushrooms fry till aromatic and add mince
Fry till brown add rice wine, sesame oil, add sauces and spring onions, bean shoot and chestnuts
Place in lettuce cup and garnish with spring onions and bean shoots
